Spalted Maple Gyuto

The Xiro Gyuto is a true chefs knife. When I was cooking professionally I kept knife very similar to this on the line with me every night. You can do prep on the heel, go between bones with the tip and slice proteins in one pull. Made from 8670 High Carbon Steel and weighing in at 187g, a 216mm cutting edge and a 356mm over  all profile. I love this knife, if I only had to choose only one to cook with it would be this one.
