Triple Dyed Maple Burl Ko Nakiri

The Xiro Nakiri is a little vegetable slayer. This vegetable cleaver gets it done, hollow ground to assist with food release and a rounded tip to allow for rock cutting if you’re not into the whole pull cut thing.  Made from 8670 High Carbon Steel and weighing in at 171g, a 140mm cutting edge and a 267mm over all profile. I like this Nakiri because of its heel height, 58mm at the heel! This allows me to slide everything I’ve just cut into the blade then drop in into a bowl or pan with ease.
