Stainless San Mai Petty

The Xiro Petty is a full sized Gyuto at 75% scale. A great prep and delicate work knife that works well as a boning knife in a pinch. Made from 416 stainless cladding over a 52100 core at 62HRC, it has an ancient bog oak handle with an olive wood ferrule. This petty is a little thicker at the spine at 3mm and weighing in at 142g,  a 155mm cutting edge and a 300mm over all profile. This is a durable utility knife with lower maintenance than a full carbon steel blade.
