Stainless San Mai Bunka

The Xiro Bunka is our prep king. It’s a perfect size and shape for almost all meat and veg prep.  Forged from 416 stainless and 52100 High Carbon Steel and weighing in at 168g, a 160mm cutting edge and a 300mm over all profile. The handle is maple burl with a bog oak ferrule. I like this Bunka because of its heel height, 58mm at the heel! This allows me to slide everything I’ve just cut into the blade then drop in into a bowl or pan with ease.
