Cross Cut Maple Burl Petty

The Xiro Petty is a full sized Gyuto at 75% scale. A great prep and delicate work knife that works well as a boning knife in a pinch.  Made from 8670 High Carbon Steel and weighing in at 121g,  a 154mm cutting edge and a 285mm over all profile. I find myself reaching for this knife as often as its full sized counterpart, couldn’t work without it!
